Ingredients

  • 100g chicken breast, cooked and sliced
  • 1 tsp fish sauce
  • 1 Tbsp fresh coriander, chopped
  • 1 Tbsp fresh mint, chopped
  • 1 clove garlic, finely chopped
  • 1 tsp honey
  • 1 Lebanese cucumber, sliced
  • 1 lime, juiced
  • ½ cup long grain rice, cooked (basmati or brown)
  • 1 pear, cut into thin wedges
 

Method

  1. Combine the pear, cucumber, chicken, mint and coriander.
  2. Mix together the lime juice, honey and fish sauce and garlic.
  3. Pour the dressing over the salad, mix through and serve.
  4. Serve in lettuce cups for an instant San Choy Bau, or fill into softened rice paper for quick and easy rice paper rolls.
