A spicy dish with great flavour. It can be served as a snack, an hors d'oeuvre, an entre or in a salad as a main. Very versatile and delicious. The cool dipping sauce is essential though as it balances out the heat in the cajun spice. This recipes serves about 8 as an entrée served on a bed of mixed lettuce leaves, or about 20 people as an hors d'oeuvre.

Ingredients

  • 4 boneless chicken breast fillets, cut into 2 cm wide strips
  • 1 qty Lime Dipping Sauce
  • 1 cup cajun spice mix

Method

  1. Preheat barbecue to a high heat.
  2. Place the spice in a plastic bag, add the chicken strips and shake to coat.
  3. Shake off excess spice mix and cook the chicken pieces, turning frequently, on lightly oiled barbecue plate for 5-7 minutes or until chicken is tender.
  4. Serve with the dipping.
