Classic Caesar salad uses cos lettuce (romaine), rocket (arugula), anchovies, egg and Parmesan cheese. I tend to only use cos lettuce in mine.

Ingredients

  • 1 qty Caesar Dressing
  • 1 cup Croutons
  • 1 large egg
  • 1 head cos lettuce, outer leaves removed
  • 2 slices of prosciutto, roasted
  • 1/3 cup parmesan, grated or shaved
 

Method

  1. Make the dressing.
  2. Make the croutons.
  3. Poach the egg.
  4. Tear the lettuce into 5-6cm pieces and add them to a large bowl (wooden if you have one).
  5. Add half the dressing, toss, add remaining dressing, parmesan and croutons and toss again.
  6. Serve on chilled plates topped with the poached egg and prosciutto, as whole slices or crushed over the top.
