If you plan to keep coleslaw, don’t dress it until you need it, the mayonnaise dressing will wilt the vegetables and make them soggy.

Ingredients

  • 1 qty Basic Mayonnaise (coleslaw variation)
  • 1 red capsicum, deseeded and finely sliced
  • 1 large carrot, grated
  • 2 stalks celery, thinly sliced
  • ¼ head Chinese cabbage, finely shredded
  • 1 Lebanese cucumber, deseeded and finely sliced
  • ¼ head red cabbage, finely shredded
 

Method

  1. Make the dressing and set aside.
  2. Place the cabbage, celery, capsicum, carrot and cucumber in a large bowl.
  3. Toss well to combine.
  4. Add dressing to coleslaw and toss until well combined.
  5. Taste and adjust seasoning if needed.
