This salsa works any time of the year. Just use whatever fruits are in season with the base ingredients and let the flavours develop. Salsa are great on crusty bread, or as accompaniments to meat, fish or poultry.

Ingredients

  1. 3 cups seasonal fruit (choose from figs, peaches, plums, apricots, melons etc whatever is in season)
  2. ½ cup red onions, finely diced
  3. ½ large jalapeno chilli, seeded and diced
  4. ¼ cup fresh coriander, chopped
  5. 6 Tbsp fresh lime juice
  6. Flaked salt, to taste
  7. Freshly ground black pepper, to taste

Method

  1. Combine the fruit, onions, jalapeno, and coriander in a mixing bowl.
  2. Season with the salt and pepper.
  3. Add the lime juice and olive oil and mix well.
  4. Set aside for the flavours to develop before serving.
