Refrigerator biscuits are made from a stiff dough that is refrigerated to become even stiffer. The dough is typically shaped into logs which are sliced into rounds before baking. Variations include - Lemon and Caper Refrigerator Biscuits, Orange, Pistachio, and Black Olive Refrigerator Biscuits, Fennel and Raisin Refrigerator Biscuits, Blue Cheese and Pecan Refrigerator Biscuits, Parmesan and Rosemary Refrigerator Biscuits, Gruyere and Thyme Refrigerator Biscuits, Herb Refrigerator Biscuits, Almond and Pistachio Refrigerator Biscuits, Chocolate Refrigerator Biscuits, Hazelnut Refrigerator Biscuits, Spiced Refrigerator Biscuits and Ginger Refrigerator Biscuits. Quantity depends on the thickness you cut the dough.

  1. 2½ cups plain flour
  2. 1½ tsp baking powder
  3. 2 large eggs
  4. 1 cup milk, buttermilk or sour cream
  5. 250g butter, chilled and cut into cubes
  6. 2 Tbsp olive oil, plus 1 tsp extra Savoury
  7. ¼ tsp freshly ground black pepper
  8. 1 tsp flaked salt Sweet
  9. 1½ cups caster sugar or icing sugar (icing sugar will give a softer textured biscuit)


  1. Cover a baking slide with baking paper.
  2. Place the flour, baking powder, salt and pepper or sugar in the bowl of a food processor; pulse till all ingredients are mixed.
  3. Gradually add the butter cubes one at a time, while the processor motor is running, till the mixture resembles coarse meal.
  4. Add the variation ingredients.
  5. In a separate bowl, whisk together the eggs, milk, and olive oil and gradually pour into the meal mixture until it combines and soft dough is formed.
  6. Place the dough on a sheet of freezer-go-between and mould it into a log about 15cm long and 3cm wide.
  7. If you’re planning to make the biscuits straight away, refrigerate the dough for a couple of hours till it firms up enough to be able to slice without collapsing.
  8. If you’re making the dough in advance of baking later, freeze the log until required.
  9. When ready to make your biscuits, bring the dough to room temperature for 15 minutes before cutting off the number of slices required.
  10. The rest can be returned to the freezer and refrozen.
  11. Preheat the oven at this time.You can also roll this mixture out and cut with cookie cutters and bake immediately.

  • Lemon and Caper Refrigerator Biscuits – add ¼ cup capers, drained and roughly chopped, zest of 1 lemon and ¼ cup fresh, finely chopped, flat leaf parsley to the flour mixture.
  • Orange, Pistachio, and Black Olive Refrigerator Biscuits – add 1 cup shelled pistachio nuts, 1 cup black olives, pitted and finely chopped, and zest of 1 orange to the flour mixture.
  • Fennel and Raisin Refrigerator Biscuits – add 2 Tbsp whole fennel seeds, toasted and ½ cup dried raisins, coarsely chopped to the flour mixture.
  • Blue Cheese and Pecan Refrigerator Biscuits – add ¾ cup roughly chopped pecans and 90g crumbled hard blue cheese to the flour mixture.
  • Parmesan and Rosemary Refrigerator Biscuits – add 2 tsp finely chopped fresh rosemary, 1 cup grated Parmesan cheese and 2 Tbsp of sour cream to the flour mixture.
  • Gruyere and Thyme Refrigerator Biscuits – add 1½ Tbsp chopped fresh thyme and 1 cup grated Gruyere cheese to the flour mixture.
  • Herb Refrigerator Biscuits – add 1 cup mixed chopped fresh herbs – choose from parsley, dill, thyme, coriander, chives, rosemary, or basil – to the flour mixture.


  • Almond and Pistachio Refrigerator Biscuits – Add ½ cup slivered almonds, 2 – 3 drops of almond extract/essence and ½ cup shelled unsalted pistachio nuts to the flour mixture.
  • Chocolate Refrigerator Biscuits – Add ½ cup cocoa powder and ½ cup grated cooking chocolate to the flour mixture.
  • Hazelnut Refrigerator Biscuits – Replace ¾ cup of the flour with either almond meal or hazelnut meal and add ¼ cup of either chopped almonds or chopped hazelnuts.
  • Spiced Refrigerator Biscuits – Add 1 tsp ground cinnamon and ½ tsp grated nutmeg to the dry mixture.
  • Ginger Refrigerator Biscuits – Add 1 Tbsp ground ginger to the dry mixture.
